The Culinary Institute of America at Greystone is all about food, mostly for its students who come from across the country to learn how to cook. But now, the academy has opened a place for the public to enjoy the final results, with the new Gatehouse Restaurant. Orchestrated by CIA faculty-led students, Gatehouse Restaurant is the showcase professional experience for CIA students who have completed two years of culinary, baking and pastry, hospitality and beverage management instruction at the school. Serving pre-fixe meals Tuesday through Saturday, it does close for school holidays like spring break, but that’s just part of the natural, expected operation of a student-run restaurant. Drawing from the academy’s on-site culinary garden, menus are seasonal and produce-centric, as three courses for $39 and four courses for $49.
